The Zombies range to panic the villagers is 8 blocks or less. Iron golems spawn if the platform is within 6 blocks(in either direction up or down) of the pod normally the center block where the villager stands, but no more than that. It takes about 5 to 10 seconds to panic villagers.
The villagers won't breed unless there is an unclaimed bed. If you are just trying to populate the area and don't need 'special' villagers (like ones with guaranteed empty inventories) just spam down a while bunch of beds and throw a few stacks at whoever is closer. You will probably be rewarded with some iron golems running around for good
Your question about doors: Doors do not increase the spawn rate but do increase the village cap. (see quote below). Golems will spawn in a 16×16×6 area, centered between the 21 or more valid doors in a village if it has at least 10 villagers.
